Zutaten:
1 kg Schweinegulasch
Öl zum Anbraten
4 Kartoffeln, grob gewürfelt
4 Möhren, in grobe Stücke geschnitten
2 Kolben Zuckermais in ca. 5 cm Scheiben geschnitten
Für die Salsa:
1 gr. Dose Tomatillos aus dem Fachhandel oder ersatzweise 6 grüne Tomaten
1 Zwiebel
2 Knoblauchzehen
2 getr. kleine rote Chiles
1 EL Sesamsamen
1/4 TL Cayennepfeffer
1 TL gemahlenen Kümmel
1 Tasse frischen gehackten Koriander
Zubereitung:
Fleisch waschen, mit Haushaltspapier trocken tupfen und in etwas Öl gut anbraten.Sämtliche Zutaten für die Salsa in einen Mixer geben und pürieren und alles, auch den Koriander, zu dem Fleisch geben, salzen, pfeffern, aufkochen und ca. 60 Minuten bei schwacher Hitze köcheln.Die Möhren, Kartoffeln und den Mais dazugeben (evtl. noch etwas Wasser dazugeben, so dass alles gut bedeckt ist), Deckel drauf und noch gut weitere 60 Minuten köcheln lassen bzw. bis das Fleisch gar ist.Vor dem Servieren mit Salz und Pfeffer abschmecken.
Die Zutaten der Salsa bereits zerkleinert. Zum Glück hatten wir Tomatillos vorrätig. Das ganze sieht auf dem Foto allerdings dunkler aus, wie es in Wirklichkeit war.
Nach dem Anbraten kommt die Salsa aus dem Mixer dazu. Danach ist erstmal 1 Stunde lang köcheln angesagt.
Die grob gewürfelten Kartoffeln und Möhren werden in den Topf gegeben und gekocht, bis sie weich sind.
Zuckermais zum Abnagen gab es leider nicht. Alternativ haben wir 1 1/2 Dosen Gemüsemais genommen.
